2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large egg
1/4 cup canola oil
1 cup orange juice with some pulp
1 1/4 cups granulated white sugar
1 tablespoon dried orange zest
1 1/4 cups fresh cranberries
Preheat oven to 375 degrees F. Paper line or
coat a 12 muffin tin with cooking spray.
Mix flour, baking powder, baking soda and salt
together in a bowl and set aside.
In another bowl combine egg, oil, juice, sugar
and orange zest mixing well.
Add cranberries and liquid mixture to the dry
mixture. Combine until flour is just moistened.
Do not over mix.
Pour batter into muffin tin and bake for 20 minutes,
or until tester comes out clean.
Remove muffins from tin and let cool on a rack.
Makes 12 muffins.
