Cranberry Streusel Muffins

List of Ingredients
for the muffins:
1 3/4 c. flour
2 tsp. baking powder
3/4 tsp. salt
1/2 c. white sugar
4 tbsp. melted butter, cooled
3/4 c. milk
2 eggs
1 c. whole or chopped cranberries
1 tsp. grated orange peel
for the streusel topping:
1/2 c. light brown sugar
1/2 tsp. cinnamon
1/4 c. chopped nuts, optional
Recipe
for the muffins:
Preheat the oven to 400. Grease well or paper line muffin pan(s).
Sift together the flour, baking powder, salt and white sugar.
Whip the butter and milk with the eggs.
Combine the egg mixture with the dry ingredients in a few swift strokes, until just moistened.
Fold in the cranberries and orange peel. Do NOT over mix.
Fill the muffin tins about 2/3 full.
for the streusel topping:
Combine the brown sugar, cinnamon and nuts together.
Top each muffin 1 tsp. of the streusel mixture.
Bake for 20 - 25 minutes or until a tester comes out clean.
Makes about 2 dozen regular size muffins or 1 dozen large.
