1 box Spice Cake Mix*
2-3 medium TEXAS STAR grapefruit*, sectioned (capturing juice)
Prepare spice cake mix as directed except substitute freshly squeezed
grapefruit juice for the water. Pour into muffin pans. This will make
approximately 14 muffins.
*Be sure to use a spice cake mix that calls for water
*If early in the season, more grapefruit may needed to be sectioned for the
juice. Be sure to hold the fruit as it is being sectioned over a bowl to
capture all the juice. Squeeze the cut off peel for additional juice.
Sections can be held in the refrigerator for other uses.
Icing
1 can of cream cheese icing
Red food coloring
Several grapefruit sections broken into smaller pieces
Remove icing from the can. Add drops of red food coloring until it turns a
nice pinkish color. Frost the muffins. To the tops of the muffins sprinkle
the broken grapefruit sections as a garnish.
