Onion Muffins

1 large egg
1/3 cup vegetable oil
3/4 cup milk
1 cup self ising flour
1 cup old ashioned rolled oats
1/4 cup white granulated sugar
1/2 cup chopped Vidalia onion
3/4 cup grated extra sharp Cheddar
1/3 cup chopped pecans, optionalRecipe
Preheat oven to 400 degrees F.
Butter 36, 1/8th cup size muffin tins.
Use a large bowl to whisk together egg, oil and milk.
Add flour, oats and sugar, stirring until just combined.
Fold in onion, Cheddar and nuts.
Spoon the mixture into muffin tins.
Bake in middle of oven for 15 to 20 minutes, or until
golden in color.
Turn onto racks.
Serve warm or room temperature.
Makes 36 muffins.
