    Orange Brunch Muffins

    List of Ingredients

    2 1/2 c. self rising flour
    3/4 c. regular flour
    2/3 c. white granulated sugar
    2 large lightly beaten eggs
    1/2 c. plain yogurt
    1 c. orange juice
    1 tbsp. grated orange peel
    1 1/3 c. + 2/3 c. white chip morsels, (12oz.), divided
    1/2 c. chopped nuts, optional

    Recipe

    Preheat oven to 375. Grease or paper line 18 muffin cups.
    Combine self rising flour, regular flour and sugar in a large bowl.
    Add eggs, yogurt, orange juice and peel and stir just until blended.
    Stir in 1 1/3 c. of the morsels.
    Spoon batter 3/4 full, into muffin cups.
    Sprinkle with nuts.
    Bake for 18 - 22 minutes or until tester comes out clean.
    Cool in pans for 10 minutes, then remove to wire racks to cool slightly.
    Microwave remaining 2/3 c. morsels in a small, heavy duty plastic bag on medium/high, (70%) power for 1 minute.
    Knead bag and microwave at additional 10 - 20 second intervals, kneading until smooth.
    Cut a tiny corner from bag and squeeze to drizzle over muffins.
    Serve warm.
    Makes 18 muffins.
