Orange Juice Muffins + Frosting*

Orange Juice Muffins + Frosting
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup white granulated sugar
1 teaspoon grated orange rind
1 cup orange juice
1 medium egg
1/3 cup vegetable oil
Preheat oven to 400 degrees F.
Coat 16 or 18 muffin cups with cooking spray.
Use a large bowl to combine the flour, baking soda, salt, sugar
and the orange rind. Mix together to make sure they are well
mixed.
Pour in the orange juice, the egg, and the oil. Stir so the dry
ingredients are moistened by the wet ingredients. Do not over mix;
the batter should still be lumpy.
Pour the batter into the muffin cups and bake for about 20 minutes.
When the tops are nicely browned, remove from the oven and allow
to cool slightly. Ice with below frosting, if desired.
Frosting:
1 cup powdered confectioners sugar
1 1/2 tablespoon milk
1 teaspoon vanilla extract
1/4 teaspoon almond extract, optional
Combine in a small bowl until smooth.
Then drizzle over the muffins.
