Parmesan Muffins

2 c. flour
3/4 c. freshly grated Parmesan cheese
2 tsp. sugar
2 tsp. baking powder
2 tsp. Italian seasoning
2 tsp. dried parsley flakes
1/2 tsp. baking soda
1/2 tsp. salt, optional
1 egg
1 1/4 c. buttermilk
1/4 c. vegetable oil
Recipe
Preheat oven to 400. Grease or paper line a muffin pan.
Combine the flour, cheese, sugar, baking powder, Italian seasoning, parsley flakes and salt together in a large bowl.
Beat the egg, buttermilk and oil together in a small bowl.
Stir the wet ingredients into the dry ingredients until just moistened.
Fill the muffin cups 2/3 full.
Bake for 20 - 22 minutes or until a tester comes out clean.
Cool for 5 minutes before removing from pan to a wire rack to cool.
