    Peach Muffins

    1/4 cup margarine
    1/2 cup sugar
    1/4 teaspoon salt
    1/4 teaspoon cinnamon
    1 teaspoon lemon juice
    1/4 teaspoon vanilla
    1 cup skim milk
    2 egg whites
    1 3/4 cup flour
    1 tablespoon baking powder
    1 cup peeled, freshly chopped peaches

    Cream margarine and sugar. Add salt, cinnamon,lemon
    juice and vanilla.
    Mix well. Stir in milk and egg whites. . Combine flour
    and baking powder and stir in until just blended. Do not
    overmix. Fold in peaches.
    Pour into lightly greased muffin tin or spray with PAM (tm).
    Bake at 450 degrees for 16 to 20 minutes.
    Makes 12 muffins.
