another one I found.
Pizza Muffins #2
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar
1/2 cup shredded Mozzarella cheese
2 Tablespoons grated Parmesan cheese
12 teaspoon dried basil
1/4 teaspoon dried oregano
1, 8 ounce can stewed tomatoes
1 large egg
1/4 cup butter, melted
2 Tablespoons reconstituted dried tomatoes,
Heat oven to 400 degrees F.
Grease 12 wells in a muffin tin.
In a large bowl, combine flour, baking powder, salt,
sugar, Mozzarella, Parmesan, basil and oregano.
Mix well.
Make a well in the center of the mixture.
In another bowl, combine tomatoes, egg, butter and
reconstituted tomatoes; add to the flour mixture,
stirring just until moistened.
Spoon into muffin wells, filling 2/3rds full and bake
for for 25 minutes. If, after the 1st 10 minutes, the
muffins are browning too fast, turn temperature down
to 350 degrees F.
Makes 1 dozen muffins.
Serve immediately.
Store any left-over muffins in the refrigerator.
