1/2 cup + 1 1/2 tablespoons white granulated sugar
6 tablespoons melted butter
2 large eggs
1 cup canned solid pack pumpkin
1/2 cup milk
1/2 cup raisins, optional
1/2 cup chopped dates, optional
1/2 cup chopped walnuts, optional
1 1/2 cups flour
2 tablespoons baking powder
1/2 teaspoons salt
1 teaspoon + 1/4 tesaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground ginger
Recipe
Preheat oven to 400. Grease 18 muffin cups.
Mix the flour, baking powder, salt, the 1 tsp. cinnamon, cloves and ginger together in a large bowl and set aside.
In a large bowl, beat together the 1/2 c. sugar and the butter.
Add the eggs, pumpkin, and milk and mix well.
Mix in the fruits and nuts.
Add the wet mixture to the dry mixture, and combine, using as few strokes as possible, until just moistened.
Fill the muffin cups 2/3 full.
Combine the 1 1/2 tbsp. sugar and the 1/4 tsp. cinnamon and sprinkle over the tops of the muffins.
Bake for 20 minutes or until a tester comes out clean.
Makes 18 muffins.
