Strawberry Crumb Muffins

List of Ingredients
for the muffin batter:
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt, (if using salted butter, omit)
1/2 c. unsalted butter
1/2 c. sugar
1 lightly beaten egg
1 tsp. vanilla extract
1/2 c. milk
1 c. fresh sliced strawberries
for the crumb topping:
1/8 c. butter or butter flavored shortening
1/4 c. sugar
1/2 c. flour
Recipe
Preheat the oven to 350. Paper line or grease a 12 muffin pan.
for the muffin batter:
Stir together the flour, baking powder and salt. Set aside.
Cream together the butter and sugar.
Add the egg and vanilla and blend well.
Alternately add the dry ingredients and milk until just combined.
Fold in the strawberries, being careful not to over mix.
Fill muffins 3/4 full.
for the crumb topping:
Combine the butter and sugar until well combined.
Blend in the flour until crumbly.
Sprinkle over top of each muffin.
Bake for 20 - 25 minutes or until a tester comes out clean.
