Tramping Muffins
Wet Mix -
1/4 cup oil
1 cup yoghurt
1 egg
1/4 cup shredded coconut
1/4 cup chopped nuts
1/4 cup raisins
1/4 cup choc chips
1/4 cup chopped dried apricots
1/4 cup sugar
1 cup bran
Dry Mix -
1 1/4 cups flour
1 1/2 tsp baking powder
Preheat oven to 400oF, prepare pans. Blend wet mix ingredients & mix well.
Add dry mix until just blended. Spoon into pans & bake for 15-20 mins.
Makes 12 muffins.
