Lasagna Casserole #5, spinach, easy
1, 10 ounce package frozen chopped spinach, thawed,
...drained and squeezed dry.
1 pound loose country sausage
1 1/2 cups + 1 1/2 cups shredded mozzarella cheese, divided
1 1/2 cups Ricotta cheese
1, 28 ounce can onion + garlic spaghetti sauce
8 lasagna noodles, cooked al dente to package
...directions and drained.
Preheat oven to 350 degrees F. Saute sausage in a heavy
frying pan over a medium heat, for about 8 minutes. Mix
with 1 1/2 cups Mozzarella with the Ricotta cheese in a
medium bowl.
Place about 1/2 cup spaghetti sauce in 9" square baking dish. Top with two
lasagna noodles, then with 1/3 of sausage filling. Repeat layers, ending
with spaghetti sauce. Cover with foil and bake at 350 degrees for 35-40
minutes until hot and bubbly. Sprinkle with remaining 1-1/2 cups mozzarella
cheese and return to oven. Bake 5-10 minutes longer until cheese is melted.
