I love this easy recipe because I love tiny peas! You can use any type of
frozen vegetable, including lima beans, corn, asparagus, or snap peas.
1, 9 ounce package refrigerated tortellini pasta
2 cups frozen veggie of your choice, ( baby peas,
...corn, asparagus, lima beans, carrots, or snap peas)
3 tablespoons butter
1/2 cup freshly grated Parmesan cheese
Cook the tortellini al dente to the package directions. Place
your frozen veggie in a colander. Pour the hot water/tortellini
right over top of the veggie in the colander. This will thaw the
veggie perfectly. Return everything back into the pot and add
the butter. Stir over a low heat until the butter is melted and
the pasta and veggies peas are coated. Sprinkle with the
Parmesan cheese and serve. Makes 3 servings .
