Pasta w/Spinach Pesto, Ham+Tomatoes
1 bag (10 ounces) fresh spinach
1 pint (12 ounces) cherry tomatoes
8 ounces sliced boiled ham
3 large cloves garlic
1/4 cup olive oil
1/4 cup grated romano or parmesan cheese
3 T. sliced or slivered almonds
1/2 tsp. salt
1 pound linguine, freshly cooked and drained
Soak spinach leaves in warm water 10 minutes,
changing water once.
Meanwhile quarter cherry tomatoes. Stack ham slices
and cut crosswise into thin strips; separate strips.
Smash garlic cloves and remove skins.
Drain spinach. Put half into a food processor with oil,
grated cheese, almonds, garlic and salt. Process until
finely chopped; add remaining spinach and process
until you have a thick puree.
Toss hot pasta with spinach pesto; gently stir in tomatoes and ham.
