Pasta w/Sundried Tomato Cream Sauce
1 Tbsp. Olive oil
4 cloves garlic, finely chopped
1 c. chopped drained oil packed sun dried tomatoes
1 c. whipping cream
1, 7 1/4 ounce jar roasted red peppers, drained + chopped
1/2 tsp. dried crushed red peppers
1/2 c. + 1/2 c. chopped fresh basil leaves, separated
1 pound penne pasta
1 c. freshly grated Parmesan cheese
Heat oil in a heavy medium sized saucepan over medium heat.
Add garlic and saute 1 min. Add tomatoes, cream, roasted
peppers and crushed red peppers. Simmer for 2 mins.
Stir in basil; simmer 1 min. longer.
Cook pasta al dente to package directions. Drain, reserving
3/4 c. of the pasta cooking liquid.
Return pasta to pot. Add sauce, cheese and 1/2 c. basil and
toss to coat.
Add enough of the reserved cooking liquid to pasta to moisten
if too dry.
Season with salt and pepper.
Makes 4 servings.
