Pasta w/Sweet Onion + Cheese Sauce

If you like onions, try this recipe.
Pasta w/Sweet Onion + Cheese Sauce
3 large sweet onions
3 tbsp. Olive oil
1 1/2 tsps. ground cumin
1 1/2 tsps. ground New Mexico red chile
...(skip if you don't like it hot)
3/4 tsp. salt
dash of cayenne pepper
1 1/2 cups fresh or canned diced tomatoes
3/4 cup fresh or frozen corn kernels
2 jalapeno or serrano chiles, seeded and finely chopped
1 1/2 cups chicken stock
12 ounces fettuccine pasta
6 ounces goat cheese or feta cheese crumbled
fresh cilantro sprigs for garnish
Peel the onions and cut into sliced about 1/4 inch thick.
Separate the slices into rings.
In large deep skillet, heat the olive oil over a medium/low
heat. Add onions, cumin, red chile, salt and cayenne.
Cook, stirring occasionally until the onions are soft and golden
brown, about 25 minutes.
Stir in the tomatoes, corn and jalapenos.
Cook 2 minutes longer.
Pour in the chicken stock and increase heat to high.
Cook, stirring occasionally until the sauce thickens slightly,
5 to 10 minutes.
Combine the sauce, cook pasta al dente to package directions,
and goat cheese, stirring and tossing to soften the cheese.
Serve on warm dishes and garnish with cilantro.
Makes 4 - 6 servings.
If you don't like to so hot, leave out the chile.
