    Tomatoes w/Pasta Casserole

    Tomatoes w/Pasta Casserole

    1, 7 ounce package elbow pasta
    1 3/4 cups milk
    3/4 cup grated Parmesan cheese (3 ounces)
    1/3 cup chopped onion
    3 beaten eggs
    1 1/2 teaspoons salt
    1/2 teaspoon ground black pepper
    1, 6 ounce package Mozzarella cheese slices,
    ...cut in thin strips
    2 tomatoes, one sliced, one cut in wedges
    1 1/2 cups fresh breadcrumbs
    2 Tablespoons butter, melted

    Cook pasta al dente to package directions. Drain.
    Heat oven to 350 degrees F.
    Combine pasta, milk, 1/2 cup of the Parmesan cheese,
    onion, eggs, salt, pepper, and Mozzarella cheese.
    Pour 1/2 of pasta mixture into 2 quart casserole.
    Top with the sliced tomato.
    Place remaining pasta mixture on top.
    Toss crumbs in butter and sprinkle on top.
    Arrange remaining tomato wedges on top.
    Bake for 45 minutes.
    Sprinkle with remaining Parmesan and return to oven
    for 5 minutes.
    Makes 8 servings.
