Vodka Tomato Garlic Penne

This is creamy and spicy and makes a nice company
dinner.
Using a good quality vodka is a must in this recipe.
Vodka Tomato Garlic Penne
2 Tablespoons Olive oil
3/4 cup finely chopped onion
2 large cloves of garlic, minced
1, 28 ounce can diced tomatoes drained
1/2 cup vodka
1 cup 1/2 & 1/2
1/4 teaspoon crushed red pepper flakes
salt and pepper to taste
1, 16 ounce package penne pasta
1/4 cup grated Parmesan cheese
1/4 cup sliced green onions
In large skillet heat oil.
Saute onion until tender about 4 minutes.
Add garlic and cook for another minute.
Add tomatoes.
Stir in vodka, and cook over medium high heat
until it comes to a boil, about 5 minutes.
Reduce heat and add 1/2 & 1/2 and the crushed
red pepper, stirring constantly. Continue cooking
3-5 minutes until heated through.
Meanwhile cook pasta al dente to package
directions. Drain well and add to tomato mixture,
mix well.
Toss with Parmesan cheese and sprinkle with onions.
