Apple Pie Bars
for the filling:
4 c. peeled tart (granny smith) cooking apples, sliced thinly
1, 6 ounce container apple juice
1 tsp. ground cinnamon
1 tbsp. cornstarch
1/2 c. sugar
for the crust:
3 c. flour
1 c. sugar
1 tsp. baking powder
1/4 tsp. salt
1 c. butter, softened, (2 sticks)
2 eggs, slightly beaten
Preheat oven to 375. Grease a 15x10x1 inch or 12x9x2 inch pan.
for the filling:
In a large saucepan, combine apples, apple juice, and cinnamon. Cook over medium high heat until boiling, stirring occasionally.
Combine cornstarch and sugar. Stir into boiling mixture, cook and stir until thickened and bubbly. Remove from heat to cool slightly.
for the crust:
In a large mixer bowl stir together flour, sugar, baking powder and salt.
Add butter and eggs. Combine until mixture is crumbly. Press 2/3 of crumb mixture (approximately 3 1/2 c.) into pan.
Spread apple mixture evenly over crust.
Sprinkle remaining crumbs over apples.
Bake for 25 - 30 minutes or until golden brown.
Cool, cut into bars.
Makes 48.
