Black Walnut Pie #2
1, 8 inch, uncooked pie crust
3 large eggs
1/3 cup light brown sugar
1 cup maple syrup
1 teaspoon cider vinegar
1/2 teaspoon vanilla extract
3 teaspoons melted butter
1 cup coarsely chopped black walnuts
Heat oven at 375 degrees.
In a mixing bowl, beat the eggs with sugar.
Stir in the maple syrup, vinegar, and melted butter.
Spread the black walnuts evenly on the bottom of the crust.
Pour the filling over top and bake for 35 minutes.
The center will not be completely set. It will set as pie cools.
Makes 8 servings.
