    Buttermilk Scones

    1 3/4 c. flour
    1 tsp. sugar
    2 tsp. baking powder
    1/2 tsp. baking soda
    5 Tbsp. butter, cut into small cubes and very, very cold
    3/4 c. buttermilk

    Preheat the oven to 450.
    Combine the flour, sugar, baking powder and baking soda in a large bowl.
    Cut in the butter until mixture resembles a coarse meal.
    Add just enough buttermilk to form a soft dough.
    Roll the dough out on a lightly floured surface to a thickness of 1/2".
    Cut the dough into 1 1/2" circles.
    Place on an ungreased cookie sheet and bake for 10 to 15 minutes until lightly browned.

    It's important to not scrimp on the buttermilk and accurately measure baking soda and baking powder.
