2 eggs
1 1/2 cup sugar
1 pinch salt
1/2 cup butter; softened
1/4 cup flour
1/2 cup milk
1 cup shredded coconut
1 9 inch pastry shell, unbaked
Preheat oven to 325. Beat eggs and gradually add sugar and salt; beat until thick and lemon colored. Blend in butter; then flour and milk. Add coconut. Spoon into pastry shell and bake for 45 minutes to 1 hour or until set and slightly browned.
Yield: 1 pie
