Impossible Lemon Pie

2 c. milk
3/4 c. sugar
1/2 c. biscuit baking mix
1/4 c. butter
4 eggs
1 1/2 tsp. vanilla
1/4 c. lemon juice

Recipe



Preheat oven to 350. Lightly grease a 10" pie plate.
Place the milk, sugar, baking mix, butter, eggs, vanilla and lemon juice in a blender/food processor.
Cover and blend on high speed for 15 seconds.
Pour into the pie plate and bake for about 50 - 55 minutes, or until a knife inserted in the center comes out clean.
