Mini Pumpkin Pies #2
3 eggs
1/2 cup sugar
1/4 cup packed brown sugar
2 cups canned pumpkin
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. cloves
1/2 tsp. salt
1 12-oz. can evaporated milk
8 mini pie shells (available at most grocery stores)
Preheat the oven to 450 degrees.
In a large mixing bowl, beat the eggs and the sugars.
Blend in the canned pumpkin, the spices, salt and milk.
Pour the filling into the pie shells.
Bake for 10 minutes, then reduce heat to 350 degrees
and bake for another 50 minutes, or until the pies set.
Serves 6 to 8.
