    for the filling:

    4 c. fresh, sliced ripe peaches,
    ...(sprinkle with 1/4 c. sugar and let stand for 30 minutes to make a juice)
    1/2 c. sugar
    1/4 tsp. cinnamon
    1 tbsp. cornstarch
    1 tsp. lemon juice

    for the crust:

    1 1/3 c. flour
    1/2 tsp. salt
    1/2 c. shortening
    4 level tbsp. cold water

    for the filling:

    Blend the 1/2 c. sugar, cinnamon, and cornstarch together in a medium saucepan.
    Stir in the peaches and lemon juice.
    Cook until the mixture thickens and begins to boil, stirring constantly.
    Boil and stir 1 minute.
    Pour into an ungreased 2 quart baking dish and keep fruit mixture hot while preparing the crust.

    for the crust*:

    Measure the flour and salt into a bowl.
    Cut in shortening until crumbly.
    Sprinkle with the water, 1 tbsp. at a time, mixing until all the flour is moistened.
    (1 tsp. water may be added if needed).
    Form into a ball and roll out on a lightly floured surface to the size to fit your baking dish.
    Place the pastry on top of the filling.
    Bake at 400 for 10 minutes, or until the crust is golden brown.

    *You could use two packaged pie crusts and roll them out, if you're not into making pie crusts.

    **Or use a home made biscuit topping:

    1 c. flour
    1 tbsp. sugar
    1 1/2 tsp. baking powder
    1/2 tsp. salt
    3 tbsp. shortening
    1/2 c. milk

    Mix all ingredients together.
    Roll out on a lightly floured surface and place on top of the filling.
    Bake at 400 for 15 - 20 minutes.
