This crust combines the best of shortening and butter.
:Pie Crust #3, flaky, buttery
2 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon sugar
1/2 cup cold shortening
1/2 cup cold chopped butter, (1 stick)
1/4 to 1/2 cup ICE water
Use a medium bowl to whisk the flour, salt and sugar together. Use
a pastry blender to cut the shortening into the flour, until it is crumbly.
Add the butter to the flour mixture and blend in. Add only enough ICE
water for the dough to stick together. Divide into 2 pieces. Wrap well,
and chill for 20 minutes before rolling out.
