    Recipe Introduction

Did you know that Texas grapefruit is sweeter than Florida grapefruit?

    List of Ingredients

    from homefireshearth newsletter
    Pink Grapefruit Pie

4 medium to large ruby red or pink grapefruit
    1 c. sugar
1 3/4 c. strained red grapefruit juice or water
    2 tbsp. cornstarch
    1/8 tsp. salt
    1 3oz. pkg. strawberry gelatin
    1 8 or 9" baked pie crust
1 c. frozen whipped topping, thawed

    Peel the grapefruit.
Separate into sections and remove the membranes.
Strain the sections over a bowl in the refrigerator, overnight.
Cook the sugar, grapefruit juice, cornstarch and salt until it is thick and clear.
Add the gelatin and stir until all the crystals are dissolved.
Brush a little of the gelatin mixture over the pie crust.
Chill the gelatin mixture and the pie crust until the gelatin starts to thicken.
Place the grapefruit sections into the pie crust.
Pour the remaining gelatin mixture on top and chill until set.
