Plum Crumble

7 c. red or black plums, thickly sliced,
(may use canned plums in same amount, rinsed and
partially dried)
2/3 c.+ 1/3 c. firmly packed light brown sugar, divided
1 1/2 c. flour
1/3 c. white granulated sugar
1/2 tsp. cinnamon
1/4 tsp. salt
3 tbsp. vegetable oil
1 tbsp. chilled butter, cut into small pieces
1 lightly beaten egg
1 1/2 tbsp. corn syrupRecipe
Preheat oven to 375 and lightly grease a 3 qt. baking dish.
In a large bowl, combine plums and 2/3 c. brown sugar. Spread over the bottom of baking dish.
Combine flour, 1/3 c. brown sugar, white sugar, cinnamon and salt in a medium sized bowl. Work in oil and butter until mixture is coarse and crumbly. Stir egg and corn syrup in with a fork. Sprinkle over top of plums.
Bake approximately 40 minutes, or until browned and bubbling.
Cool for at least 10 minutes, then serve warm.
Makes 8 servings.
