    :Shortbread Crust

    :Shortbread Crust

    2/3 c. crushed shortbread cookies
    2 tbsp. sugar
    2 tbsp. chilled butter, cut into small pieces
    1 tbsp. ice water

    Heat oven to 400 degrees F.
    Coat pie pan or 9 inch springform pan with cooking spray.
    Place crushed shortbread and sugar in a processor or blender until well combined.
    Add chilled butter until mixture resembles coarse meal.
    With processor on, slowly pour ice water in, until just blended (do not allow to form into a ball).
    Firmly press mixture into bottom and up sides of pie pan or into bottom of springform pan.
    Bake for 10 minutes.
