Strawberry Rhubarb Pie
1 fresh unbaked 9 inch pie crust
extra crust dough cut into strips
1 1/2 cups white sugar
3 Tablespoons quick cooking tapioca
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
3 cups washed rhubarb, cut in 1/2 inch pieces,
...drained
1 cup washed strawberries, drained
butter for dotting
Combine sugar, tapioca, salt and cinnamon. Add the
rhubarb and strawberries. Mix well to coat fruit.
Let stand about 20 minutes.
Spoon mixture into pie crust.Dot with butter.
Moisten crust edge. Criss cross top of pie with
crust strips. Flute edge.
Bake at 400 for 35 to 40 munutes.
