Tapioca Pie, creamy
1/3 cup sugar
3 tablespoons minute tapioca
1/4 teaspoon salt
3 cups milk
1 teaspoon vanilla
1 tablespoon butter
2 slightly beaten eggs
1 lightly baked 9 inch pie crust
ground cinnamon
Preheat oven to 325.
Combine the sugar, tapioca and salt in a medium saucepan.
Add the milk and stir. Let set for 5 minutes.
Use a medium heat to cook until it starts to boil, stirring
constantly. Let boil for 6 - 8 minutes.
Remove from the stove and add the vanilla and butter.
Stir in the eggs.
Pour into the pie crust. Sprinkle with a little cinnamon.
Bake for 25 - 30 minutes, or until a knife inserted, comes
out almost clean.
Let cool and serve with a fresh fruit or a fruit sauce, if desired.
