    Recipe Introduction

    This is a Pennsylvania Dutch recipe. Please note that this recipe calls for 10 inch pie crusts. Do not attempt to put it in 9 inch pans or it will drip all over your oven and create a big mess.

    List of Ingredients

    Wet Bottom Shoofly Pie #3, 10 inch deep dish

    2 deep dish uncooked 10 inch pie crusts
    for the crumbs:
    3 c. flour
    1 c. dark brown sugar
    1/2 c. softened unsalted butter
    for the filling:
    1 c. molasses
    2 c. dark brown sugar
    1 large egg
    2 c. boiling water
    1 tbsp. baking soda

    Preheat oven to 350.
    for the crumbs:
    Mix together until it forms fine crumbs. Set aside.
    for the filling:
    Mix together the molasses, brown sugar and egg with a whisk until smooth.
    Use a large bowl and pour in the boiling water.
    Add the baking soda, being careful, as it foams up. Stir together.
    Gradually add the water mixture to the molasses mixture and stir well to combine.
    Pour 1/2 of the batter into each pie crust, filling about halfway.
    Top each with equal portions of the crumbs.
    Bake for about 40 minutes or until the liquid is set.
    Remove from oven and cool on racks.
