crustless - Coconut Cream Pie
4 eggs
1/2 c. butter, (1 stick)
1/2 c. sugar
1/2 c. flour
1 tsp. vanilla
2 c. whole milk
1 c. flaked coconut
Preheat oven to 350. Lightly grease a pie pan.
Blend all the ingredients in the blender/food processor.
Pour into the pie pan and bake for 1 hour.
This actually makes its own crust as it bakes.
