friedPie - Dried Cherry
Crust:
2 tablespoons shortening 2 cups flour
pinch of salt
1/3 cup cold water
Filling:
2 (3-ounce) packages dried Bing cherries, chopped
1 cup water
1/2 cup sugar
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 cup chopped almonds
Combine cherries and water in a medium saucepan; let stand 30 minutes.
Bring to a boil over medium heat, and simmer 20 minutes or until liquid
evaporates, stirring often. In the meantime, blend flour, salt and
shortening in mixing bowl with fork until ingredients look quite mealy.
Add water gradually. Make
11 small balls. Roll on floured board about the size of a saucer.
Remove filling from heat; add sugar and remaining ingredients, stirring
until sugar dissolves. Cool. Put about 2 tablespoons of cherries on
dough and fold over. Fork edges. Fry in deep fat. Brown on both sides.
Makes 11 pies.
