    Bacon + Cream Cheese Chicken Pizza

    1 pound boned, skinned chicken breasts
    1/3 cup barbeque sauce
    salt and pepper
    4 slices bacon, cut into 1 inch pieces
    2, 7 to 8 inch baked pizza crusts
    1/4 cup cream cheese, (2 ounces)
    1/4 cup canned diced green chilies
    1/2 cup shredded Monterey Jack cheese
    1/4 to 1/2 teaspoon hot chili flakes

    Preheat oven to 350 degrees F.
    Place chicken in an 8 inch baking pan.
    Coat with 2 tablespoons of the barbecue sauce.
    Sprinkle with salt and pepper.
    Bake in regular or convection oven until no longer
    pink in thickest part (cut to test), about 20 minutes.
    Let set until cool.
    Set oven to 400 degrees F.
    Tear into bite size chunks and place in small bowl.
    Coat with remaining barbecue sauce.
    Cook bacon until browned and semi crisp. Drain on
    paper towels.
    Place crusts on a 12x15 inch baking sheet.
    Spread about 2 tablespoons cream cheese on each.
    Spoon saucy chicken on top of that.
    Sprinkle with bacon, chilies, cheese, and chili flakes.
    Bake until cheese is browned and bubbling,
    approximately 15 to 20 minutes.
    Cut in wedges to serve.
