1 refrigerated pizza crust
1/4 cup diced onion
1 teaspoon ddried minced garlic
2 tablespoons vegetable oil
1/2 cup diced sweet red bell pepper
1/2 cup diced sweet green bell pepper
1 teaspoon dried parsley flakes
1 1/2 cups canned ham, cubed into 1/2 inch squares
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 cups shredded sharp Cheddar cheese
1 1/2 cups hash brown potatoes, thawed and crumbled
6 large eggs
Spread dough over a 12 or 13 inch pan and let rise for 30 minutes.
Saute onions and garlic in oil for about 5 minutes or until tender.
Add peppers, parsley and ham and saute for about 5 or 6 minutes.
Season with the salt and pepper and blend.
Remove from the heat to cool.
Preheat oven to 425 degrees F.
Use a large bowl to combine ham mixture, cheese and hash browns.
Mix thoroughly. Spread evenly over the crust.
Crack the eggs and place so each slice has an egg on it.
Bake until the bottom is golden brown and eggs are cooked.
Let cool, then slice and serve.
