Pork Chops - Country Fried w/creamy gravy
1 Tablespoon vegetable oil
1 teaspoon salt
2 Tablespoons all purpose flour
8 pork chops, about 1/2 inch thick
1/4 teaspoon ground black pepper
1 cup whole milk
Heat the oil in a 12 inch skillet over moderately high heat
for about 1 minute.
Add 4 of the pork chops and cook, uncovered, for 8 minutes
on each side, or until done (when juices run clear when chops
are pierced near the bone). Cook remaining chops.
Sprinkle the chops with 1/2 the salt and pepper. Remove from
skillet.
Pour off all but 2 teaspoons of drippings from the skillet.
Reduce the heat. Whisk in flour and cook, stirring constantly,
until light brown - about 2 minutes.
Gradually whisk in the milk and cook, stirring constantly, for
1 to 2 minutes or until smooth and thickened.
Add other 1/2 of salt and pepper.
Return chops to skillet in sauce to reheat briefly.
Serve chops with gravy spooned over top.
