Ham Loaf w/Cranberry Sauce
for the meat loaf:
1 cup milk
1 cup soft bread crumbs (white)
1 1/2 pounds cured ham, ground
1 pound fresh lean pork, ground
2 eggs, beaten
for the sauce:
1 c. canned strained cranberry sauce
1/4 c. light corn syrup
1/4 c. water
Whole cranberry sauce for garnish
Heat oven to 375 degrees F.
for the meat loaf:
Scald the milk and pour it over bread crumbs.
Add to meat and mix thoroughly until no bread crumbs show.
Add eggs and mix again.
Place into a 9 x 5 inch loaf pan.
Set loaf pan into shallow pan.
Pour hot water at least 1 inch deep around sides of laof pan.
Bake for 2 hours.
If loaf browns too much, cover meat with foil.
Pour off fat and excess juice.
Serve plain or with cranberry sauce.
Serves 8.
for the sauce:
Boil cranberry sauce, syrup and water until thick.
Cool; do not chill.
Pour over loaf and put under broiler a few minutes
before serving.
Garnish platter with whole cranberry sauce.
Drain the berries if too juicy.
