    Ham w/Red Eye Gravy #2*

    Recipe Introduction

    I changed the title on this since this gravy is known as red eye gravy, similar to techgoddess, rc Ham w/Red Eye Gravy #2*

    3 pounds boneless ham, cut into 4 pieces
    1/4 c. butter
    1/4 c. firmly packed light brown sugar
    1 packet ham flavoring
    1/2 c. strong black coffee
    1 1/2 c. cold water

    Saute both sides of ham in butter, using a low heat and turning several times.
    Set ham aside in a warming dish.
    Stir sugar and ham flavoring into pan drippings.
    Stir constantly, and cook over a low heat until all the sugar is dissolved.
    Add coffee and water. Stir well.
    Simmer for 5 - 10 minutes, or until the gravy has been reduced a little.
    Serve gravy over ham or as a side.
    Makes 4 servings.
