2 cups diced ham
1/2 cup diced onion
1.2 cup chopped green pepper
2 cloves garlic
1 14 1/2 ounce can Mexican or Cajun Tomatoes
1 10 3/4 ounce can chicken broth
1/2 tsp.. dried thyme
8 drops your favorite hot pepper sauce
1 cup white rice
In large skillet, or 3 quart saucepan, sauté onion, green pepper and garlic
until soft, the last minute add the diced ham. Add tomatoes, broth, thyme,
and hot pepper sauce. Bring to boil, stir in rice. Cover and reduce heat.
Simmer for 20 minutes or until rice is tender. Make 6 servings. Serve with
raw carrots and green peppers. If your family likes it less spicy leave out
the hot pepper sauce.
