This is one of the many favorite recipes that I got from my
father (the Polish Papa!). It's incredibly easy and very, very
good. The apples, applesauce, & onion mixture cuts some
of the sharpness of the sauerkraut. As a result, even people
who claim to hate sauerkraut love this dish. If you REALLY
love sauerkraut, use two cans with both the applesauce &
apples. I usually do this, as the sauerkraut is a wonderful leftover.
Pork Chops + Sauerkraut #1
6 - 8 boneless pork chops, at least 3/4 inch thick
1, 28 ounce can sauerkraut, rinsed and drained
1, 16 ounce jar applesauce, or 2 cups
...peeled chopped apples, (4 medium size)
1 large chopped onion
1 package pork coating mix
Heat oven to 375 degrees F. Coat a 9x13x2 inch baking dish
with cooking spray. Mix the sauerkraut, applesauce/apples, and
onion together in the baking dish. Spread out evenly. Shake the
chops in the pork mixture until evenly coated. Place on top of the
sauerkraut, but don't overlap. Sprinkle any coating mix remaining
over the top of the pork and sauerkraut. Place, uncovered, in the
oven and bake for 45 - 60 minutes, or until the pork is done and
the coating crispy.
Makes 6 - 8 servings.
