Pork Chops w/Creamy Gravy
4 thick boneless pork chops
2 tablespoons flour
1 tablespoon butter
1 small finely chopped onion
1/4 cup finely chopped celery
1, 12 ounce can beer
for cream gravy:
1/4 c. + 1/8 c. flour
1 tsp. salt
3/4 tsp. ground black pepper
4 cups milk
Melt butter in large, heavy skillet over medium/high heat.
Lightly flour chops and brown quickly on both sides.
Remove.
Add onion and celery to pan and saute for a few minutes.
Replace pork chops and add beer. Bring to a boil.
Cover and simmer 15 to 20 minutes or until pork chops are
tender.
for cream gravy:
Whisk together flour, salt, black pepper and milk.
Remove pork chops to a plate.
Whisk the milk mixture into the sauce in the pan.
Cook over a medium/high heat, whisking constantly, until
thickened.
Place pork chops back into skillet and continue to cook
until gravy cooks down to desired consistency.
