    Sweet + Sour Pork Skewers

    60 bamboo skewers, soaked 30 minutes prior to using
    5 lbs. boneless country style pork ribs, cut into 1" cubes
    1/4 lb. sliced bacon
    1/2 c. sugar
    1/2 c. white wine vinegar
    1/2 c. red wine vinegar
    1 tbsp. flour
    4 beaten eggs

    Recipe



    Thread pork cubes onto skewers and place into a 9x13x2" glass pan.
    Set aside.
    Combine sugar and vinegars, mixing well.
    Pour over skewers. Cover and allow to stand for 30 minutes or overnight.
    Cook bacon slices in a large frying pan until crisp. Drain well, reserving liquid. Crumble bacon and set aside.
    Remove skewered pork and save marinade.
    Grill or broil skewers to desired doneness. Remove to a serving platter.
    Heat reserved bacon fat in a non stick skillet, over medium heat.
    Whisk in flour until smooth. Stir in reserved vinegar marinade and eggs.
    Continue heating and whisking until slightly thickened. Remove from heat.
    Stir in crumbled bacon and pour over skewers.
    Serve warm
    Makes 60 skewers.
