Desserts from a pressure cooker? Yes! Grandma would
delight in these tempters -- luscious bread pudding and
even a brand new cook can turn them out quickly, and
with ease.
2 cups Milk, scalded
3 slices Buttered bread cubes
1/4 teaspoon Salt
1/4 teaspoon Nutmeg
1/2 cup Sugar
3 Eggs, beaten
1 teaspoon Vanilla
1/2 cup Plumped raisins
3 cups Water
Pour milk over bread cubes; let stand until slightly
cooled. Addremaining ingredients; mix well. Turn
into a greased bowl that fits loosely ona low rack
in cooker. Cover bowl with foil; place on rack with
water in cooker. Close cover securely. Allow steam
to flow from vent pipe for 5 minutes. Place pressure
regulator on vent pipe; cook for 10 minutes. Allow
pressure to drop of its own accord.
Makes 6 servings.
