pressure cooker - Corned Beef, Cabbage + Potatoes
3 pounds cabbage
3 pounds potatoes
1 pound baby carrots
3 cloves garlic, peeled
1 pound white onions, peeled
1 cup water
1 whole clove (spice)
water (amount dictated by size of pressure cooker)
1 bay leaf (optional)
Place water in pressure cooker with rack.
Cut garlic into slivers and insert into corned beef.
Place meat on rack.
Add the minimum amount of water called for in the pressure
cooker's manual, this varies by size.
Cover and lock.
Cook at 10 pounds of pressure for 1 hour.
Let pressure drop of own accord, then remove cover.
Add cabbage, chunks of potatoes and remaining ingredients.
Just simmer, normally, until vegetables are tender.
Note:
The benefit of this recipe is that the corned beef, cabbage
and potatoes all have a shelf life, up to 1 month.
