Apple Sponge Pudding

Recipe Introduction
This pudding is more of a sponge cake over an upside down mixture.
A Mennonite person sent an all easy cookin recipe collector this
recipe and said it was three generations old. Baking powder is a
modern change.
List of Ingredients
5 to 6 medium sliced apples
1/4 c. butter
2 c. packed brown sugar
1 tsp lemon juice
grated peel of 1/2 a lemon
2 large egg yolks
1 c. white granulated sugar
1/2 c. cold water
1 tsp. vanilla
1 c. flour
1/2 tsp. salt
1 tsp. baking powder
2 large egg whitesRecipe
Melt the butter in a deep, 9 inch round cake pan.
Add the brown sugar and stir until well mixed.
Top with apples and sprinkle with lemon juice and peel.
Beat the egg yolks and white sugar until light and pale yellow.
Mix the water and vanilla together and set aside.
Stir the flour with salt and baking powder.
Add the flour mix to the egg mixture, alternately with vanilla mixture.
Beat the egg whites until stiff.
Fold into batter and pour over apples.
Bake at 350 for 45 - 50 minutes.
Serve hot or warm.
It is best not to unmold the pudding.
Makes 1 pan.
