2/3 cup flour
2 tablespoons white granulated sugar
3 eggs
1/4 teaspoon salt
1 3/4 cups milk
1 tablespoons butter
1 3/4 cups pitted cherries, (fresh or canned)
Preheat oven to 350 degrees F. Sift flour into a mixing bowl.
Mix in sugar, eggs and salt and stir until smooth. Gradually
add milk and stir until mixture resembles a smooth batter.
Grease a 10 inch round baking dish with some of the butter.
Spread cherries over base. Pour on batter and dot with rest
of butter.Bake on center rack of oven for 40 minutes, or until
set in the middle and browned. Serve warm or at room
temperature. Serves 6.
