    Jam Sponge Pudding

    1 ounce (28g) butter
    1 ounce (28g) granulated white sugar
    1 beaten egg
    2 ounces (56g) self-raising flour
    2 Tablespoons jam of choice

    Place the jam in the bottom of a small microwave dish/bowl.
    Beat all the other ingredients together until smooth.
    Spoon the pudding mix over the jam.
    Cover with a microwaveable lid or cling wrap that you will pierce.
    Place in microwave and cook on medium power for 2 1/2 to 3 minutes.
    Leave to set for 3 minutes before turning out into a bowl.

    Note:
    Excellent with custard.
