    Lemon Sponge Pudding

    Lemon Sponge Pudding

    1 cup 2 % milk
    1 tablespoon butter
    2 eggs , separated
    1/4 cup sugar
    1/3 cup flour
    1 lemon , grated and also the juice

    Heat milk and butter in microwave . In a small bowl beat egg yolks
    until frothy. Gradually whisk milk mixture into yolks. Combine sugar
    and flour and stir into yolk mixture. Add lemon juice and rind.
    Beat egg whites until stiff but not dry and then fold into the yolk
    mixture. Pour into a 1 1/2 quart round baking dish. Set dish in a pan
    of hot water and bake in 350 o oven for about 45 minutes. Serve warm.
